Marcia's BBQ Sauce

Ingredients

1/4 C Veg oil                                                            1/4 C Brown Sugar

1/4 C Apple Cider Vinegar                                      2/3 C Catsup

1/3 C water                                                               1 T yellow mustard

1 med Onion, finely chopped                                   6 thin slices of lemon

1/4 t pepper                                                              2 T Worcestershire Sauce

1/4 t Cayenne Pepper    

Whisk together all ingredients, Bring to a boil. Simmer 20 - 30 minutes.                                            

Mexican Pizza

 Ingredients

1 lb lean ground beef

1/2 C chopped spanish Onion

1 (8 oz) can of whole kernel Corn, drained

1 (24 oz) jar of your favorite Salsa

1 t each Chili Powder and Ground Cumin

10 6" tortillas (divided)

2 C Small Curd Cottage Cheese 

1 C Shredded Sharp Cheddar

1 small can sliced ripe olives

3 green onions, sliced

Directions

Brown meat and onions in a large skillet over med heat, drain. 

Add salsa, corn and seasonings. Layer 1/3 of meat mixture on 

the bottom of a 9 X 13 pan prepared with cooking spray. Layer 

1/2 of the tortillas, and 1/2 of the Cottage cheese mixture and 1/3 meat 

mixture. Repeat, 1 more layers of tortillas, ending with meat mixture

and top with cheddar cheese, olives and green onions. Bake at 375

for about 30 minutes or until bubbly. Let stand for 5 minutes.




Jill Taylor's Pizza

 Ingredients

Dough

3 pkg yeast

3 C water

3 T veg oil

3 t salt

6 C all purpose Flour

Sauce

2 8 oz cans of tomato paste mixed with 2 cans of water 

1 t each of garlic powder, basil, oregano & fennel, salt and pepper to taste.

Directions

Dissolve yeast in water; mix in oil, salt & flour. Knead about 10 minutes and let rise. 

Spread dough on 2 pixie pans. Cover with sauce mixture. Add favorite pizza toppings 

and Bake at 425 for about 20 minutes. 

Lemon Remoulade

 Ingredients

2 C Mayo or 1C each Mayo and Plain Yogurt

1/4 C Grainy Mustard

2 Garlic Cloves pressed

2 T chopped Parsley

1 T Lemon Juice

2 t Paprika

3/4 t or to taste ground Red Pepper (I use less)

Whisk together all ingredients and chill for at least 30 minutes.

Hot Crab Dip

 Ingredients

3 - 8 oz packages of cream cheese

2 - 7 oz cans of crab meat

1/2  t garlic salt

1/2 C mayonnaise

2 t mustard

1/2 C white wine

2 T powdered sugar

Directions

Flake your crabmeat well and remove any shells. 

All the other ingredients, put in double boiler and heat, 

stirring occasionally. Serve with crackers.

Pumpkin Apple Pie

 This recipe is for a 9", 1 crust pie.

Apple portion of pie
1 unbaked pie shell (homemade or pre-made)
1/3 C brown sugar, firmly packed
1 T cornstarch
1/2 t ground cinnamon
1/4 t salt
1/3 C water
2 T butter

Pumpkin portion of pie
2 eggs
1/2 C sugar
1 C canned or cooked mushed pumpkin
1/4 t salt
1/2 t pumpkin pie spice
1 C evaporated milk

Apple portion
Combine brown sugar, cornstarch, cinnamon, salt. Then stir in water and butter. Bring to a boil; add apples and cook 4 minutes over medium heat. Set aside.

Pumpkin portion
Beat eggs in separate bowl.  Add sugar, pumpkin, salt, pumpkin pie spice cloves and evaporated milk. Blend well.

To assemble and bake pie
Spoon apple mixture into the pie shell. Carefully spoon pumpkin layer over apples. Bake in moderate oven (375) 50 to 55 minutes. 
Use whipped cream and walnut halves as a garnish.

Apple-Cranberry Relish

 Ingredients

1 (1 lb.) package of fresh cranberries

3/4 C Sugar 

1 1/2 C boiling water

1 (3 oz) pkg of lemon flavor jello

1 C sweetened applesauce

Instructions   

Combine cranberries, sugar and water; bring to a boil. Boil rapidly 5 minutes or until cranberries pop.

Pour hot cranberry mixture over jello in a 2 qt. casserole; stir to dissolve gelatin.  Blend in applesauce. 

Cover and refrigerate overnight.
